Sweet Chili Lime Chicken
Serves 4
Ingredients
4, Chicken Breasts, Skinless & Boneless
1 Tablespoon, Honey
2 Limes, Zest and Juice
1/2 Cup, Olive Oil
1 Tablespoon, Sweet Chili Sauce
1 Tablespoon, Candied Jalapeno
1 Teaspoon, Chili Powder
1 Teaspoon, Garlic, minced
1/2 Teaspoon, ground Ginger
S&P
1/4 Cup, Cilantro, chopped
Instructions
In a small bowl add honey, lime juice, lime zest, olive oil, sweet chili sauce, jalapenos, chili powder, garlic, ginger, S&P and cilantro (leave some cilantro for garnish). Using a whisk, mix the marinade really well. Pour marinade over chicken and let sit for up to an hour. Make sure you coat all the chicken.
Heat grill to High heat. Grill chicken and cook approx. 5-6 minutes per side until cooked to an internal temp of about 160 degrees. Cooking time can vary depending on how big chicken is. The chicken will continue cooking after removing it from the grill. Serve with rice and garnish with the extra Cilantro.
I also took the leftover marinade and boiled that on stove over medium-high heat while chicken was grilling. If you use the leftover marinade, be sure to bring it to a full rolling boil the entire time you are cooking your chicken. Also, make sure you constantly stir the marinade while boiling to avoid burning and sticking to the pot. You can drizzle that over your chicken and on side of the plate.

Tips
Candied Jalapenos are really easy to find these days in supermarkets. They usually come in a small glass jar. In my supermarket, they are sold with the gourmet cheeses. They could also be in the aisle where they sell crackers. You can always ask the supermarket what aisle they are in. I always keep these on hand in my pantry. A small jar goes a long way; you only need a small amount when adding to your recipes. They are great to use in so many recipes.
If you cannot find them or don’t have any you can also use a fresh jalapeno and just finely chop it. The pepper added a nice kick (spice) to this dish. It was nicely paired with the sweet chili sauce; it gave it a slightly spicy but sweet flavor.
