I love the weekends because that means I get more time in my kitchen! I like to use anything that might be leftover and repurpose it. I also love to use ingredients that I need to get rid of soon like bananas and apples. I know I cannot get my kids to eat bananas that are too ripe or apples that are no longer crisp so they are great to use in recipes like pancakes! I do love to make recipes from scratch. Like most busy moms today, sometimes you just need to find ways to simplify and get a meal out quicker. In this recipe I do use a boxed pancake mix, but like all my recipes I do like to recreate them to make them my own.
Sunday Pancakes
Ingredients
Pancake Mix, 2 Cups
Eggs, 2
Milk, 1 cup
Vanilla Extra, 1 teaspoon
¼ cup of Golden Flaxseed
Bananas, 2-3 very ripe ones
Apple, 1-2 (whatever you have leftover from the week)
Butter, 2 tablespoons plus extra for greasing pan
Brown Sugar, 2 Tablespoons
Salt
Cinnamon, 1 teaspoon
Mini Chocolate Chips, big handful (about ¼ -1/2 cup)
Instructions
In a mixer or bowl, combine pancake mix, eggs, milk, vanilla and golden flaxseed. Cut/mash the bananas and add to pancake mix. Dice apple very small. Add 2 tablespoons of butter to a frying pan over medium heat and add apple. Sprinkle with brown sugar and stir to coat apples and then add cinnamon and dash of salt. Let that simmer until apples are tender, about 5 minutes or so. You want a nice golden caramel color. Add to pancake mix and stir well. Stir in chocolate chips.
Cook pancakes on low heat and once they start to form bubbles they are ready to flip. Cook about 1 minute after flipping.
Serving Suggestions
These pancake have so much flavor you almost don’t even need anything added to them. Serve with butter and syrup or you can also dust some powdered sugar on top.
