Have you carved your pumpkins and picked out your costumes? I can’t believe Halloween is tomorrow. We are so ready! I am excited too because I got these roasted just in time for Halloween! I love this time of year. I especially have fun watching my husband and kids pick out a design to carve on their pumpkins in preparation for Halloween. Even better, that means my husband will scoop out all the nice pumpkin seeds for me. He is so good at that!! I make roasted pumpkin seeds every year and love to play around with all the different ways to flavor them. You can keep them super simple by just adding some salt to them. You can also kick them up a notch by creating a spicier flavor and using some chili powder or cayenne pepper. You can also choose flavors that are in season right now like cinnamon, pumpkin pie spice and nutmeg. The combinations are endless. This year, I decided to go with some of the flavors in season. Roasted Pumpkin Seeds
Ingredients
Pumpkin Seeds
2 Cups Water for each 1/2 Cup Seeds
Salt, to add to water
Seasonings for Pumpkin Seeds:
1 Teaspoon, Kosher Salt
1/2 Teaspoon, Cinnamon
1/2 Teaspoon, Pumpkin Pie Spice
1/2 Teaspoon, Sugar
1/4 Teaspoon, Garlic Powder
1/8 Teaspoon, Nutmeg
Instructions
Heat oven to 400 Degrees.
Remove seeds from pumpkins and place in colander. Rinse seeds to help remove the larger pieces of pumpkin. Transfer seeds to a bowl and cover with water; this helped to get more of the pumpkin off of the seeds. On the stove, add your seeds to a small pot along with water and salt (you can add as much or little salt as you like) over high heat, bring to a boil. Once boiling, turn heat down and simmer for about 10 minutes.
In a small bowl, combine all your spices, set aside.
Spray a baking sheet. Drain the seeds and place onto a baking sheet. Sprinkle the seeds with your spice mixture (as much or as little as you like). Toss the seeds around to evenly coat them with your spices. Place in oven on top rack and bake for about 15-20 minutes, until they are nice and golden. Remove from heat, set aside to cool. Transfer seeds to a bowl or store in an airtight container.

Tips
You can play around with flavors, if you like spicy add some chili powder or cayenne pepper. You can really have fun changing up the flavor of your pumpkin seeds by using so many different spices/seasonings.
Depending on how many seeds you have, you can cut back on the amount of seasonings or add more!
In this recipe, I had seeds from 2 large pumpkins.
