We love this time of year around here. The air is getting a little cooler, the leaves are changing colors and we have pumpkin fever! There are so many great pumpkin recipes and they are all fun to make and of course taste! One tradition we have in our house on Sundays is to make either pancakes or waffles. There are so many different ways to flavor the batter and also to top the pancakes or waffles. This week we decided to make waffles and to keep them in season, we made Pumpkin Spice Waffles. The kids loved them so much they didn’t even think to add any syrup to them.
Instead, they topped theirs with some powdered sugar and a little dollop of my Spiced Pumpkin Butter then sprinkle a few mini chocolate chips. The butter melts nicely over the waffles and the powdered sugar and mini chips gives the waffles a nice sweet flavor.
My husband and I added some chopped, toasted pecans to ours instead of the chocolate chips. By toasting the pecans, it helps to intensify the flavor. The toasted pecans pair so well with the pumpkin flavor also. You can toast the nuts on the stove over a medium low heat or in the oven. Your kitchen will smell amazing while toasting them! Pumpkin Spice Waffles
Ingredients
3 Eggs
¼ Cup, Buttermilk
¾ Cup, Milk
1/3 Cup, Vanilla Yogurt
1 Stick, Unsalted Butter, melted
¾ Cup, Pure Pumpkin Puree
¾ Cup, Sugar
¾ Cup, Light Brown Sugar
2 Cups, All-Purpose Flour
2 Teaspoons, Baking Powder
1 Teaspoon, Baking Soda
1 Teaspoon, Salt
2 ½ Teaspoons, Pumpkin Pie Spice
1 Teaspoon, Cinnamon
¼ Teaspoon, Ground Nutmeg
Powdered Sugar, to dust waffles
¼ Cup, Mini Chocolate Chips
Pumpkin Spice Butter, Recipe to follow
Instructions
Heat waffle iron. Melt Butter, set aside to cool.
In a small bowl, combine flour, baking powder, baking soda, salt and all spices, set aside. In a mixer, add eggs, buttermilk, milk, yogurt, pumpkin puree and mix. Add the sugar and brown sugar, mix well. Slowly add the flour mixture to the pumpkin mixture until combined.
Add about 1 cup of batter to waffle iron and cook for about 5-6 minutes.
Topping Suggestions
Dust the waffles with some powdered sugar.
Top with pumpkin spice butter
Sprinkle some toasted pecans over waffles
Sprinkle on some mini chocolate chips
By adding 1 or all of the sweet toppings these waffles don’t even need syrup!
