Pickled Radishes
Makes 1 Mason Jar
Ingredients
About 10 small, Fresh Radishes
1 Teaspoon, Black Peppercorns
2, Garlic Cloves
3/4 Cup, Apple Cider Vinegar
3/4 Cup, Water
2 Tablespoons, Honey or Agave
1/2 Teaspoon, Salt
Instructions
Using a mandolin, thinly slice the radishes. Place the radishes into a mason jar or a container that has a good seal on it. Peel and rough chop the garlic. Add the garlic and peppercorns to the jar with the radishes.
Place a small saucepan on the stove. Add the water, apple cider vinegar, honey and salt. Turn the burner to medium heat and let the mixture come to a boil. Whisk together until the honey is dissolved. Pour the mixture over the radishes until they are completely covered with the liquid. Let the mixture slightly cool, seal the lid and store in the fridge until ready to use.
