Pickled Cucumbers
Ingredients
1 English Cucumber (seedless)
1/4, Purple Onion, sliced very thin
1 Teaspoon, Black Peppercorns
Few Sprigs, Fresh Dill
1 1/2 Cups, White Vinegar
1 Cup, Sugar
Instructions
Using a mandolin, thinly slice the cucumber (no need to peel the cucumber). Then peel and thinly slice the purple onion. Place the cucumbers, purple onion, fresh dill and peppercorns into a mason jar.
On the stove, place a small sauce pan. Add the sugar and white vinegar and turn heat to medium. Heat through just until sugar dissolves. Pour the liquid over the cucumbers and purple onions. Seal the jar (make sure it is air tight). Once the jar is slightly cooled, place in fridge until ready to use.
These pickled cucumbers are great to top off your burgers or even pulled pork sandwich. They can also be served in a small ramekin as a side to any dish.
