Emma joined me in the kitchen for some holiday baking fun! We are so excited for the Holidays. She wanted to try making some peppermint bark.
This recipe is so great for the kids to try. There is no baking involved and only a few ingredients. With a little melting of some chocolate and breaking up yummy candy canes it is super easy for the kids to make.
It was fun to let Emma pick out her favorite candy canes too; there are so many to choose from. We went with the traditional peppermint candy canes but went with the green, white and red striped ones for this recipe.
Emma did a great job learning how to melt the semi-sweet chocolate and white chocolate. We used chocolate chips for both. They were easy for Emma to measure and to melt.
We both thought that some chocolate cookies would be great in this recipe. So, we decided the next time we make them we may add a layer of crushed Oreo’s in-between the two chocolate layers. Just be sure to gently press the cookies into the semi-sweet chocolate layer before placing in fridge to set/harden.
Peppermint Bark by Emma
Ingredients
2 Cups, Semi-Sweet Chocolate
2 Cups, White Chocolate
6 Large, Candy Canes
1/2 Teaspoon, Peppermint Extract
Instructions
Spray a baking sheet with cooking spray. Line baking sheet with wax paper leaving some to hang over edges.
Chop up your candy canes. I place mine in a plastic baggie and use a meat mallet to break them up. Once you have all your candy prepared, set them aside.
In a double boiler, boil water and add 1/2 of your semi-sweet chocolate to the bowl and stir. Once the chocolate starts to melt, remove from heat and add other 1/2 of the semi-sweet chocolate and continue to stir. Return to double boiler and continue stirring until chocolate is nice and smooth. Remove from stove and pour onto baking sheet (onto wax paper). With a small knife spread the chocolate around. It doesn’t have to be even since you will be breaking up into pieces when all done.
Place tray in fridge to set/harden the chocolate. While that is chilling, melt the white chocolate. After cleaning bowl for the double boiler, return to stove on top of the boiling water. Add 1/2 of your white chocolate and stir. Once the white chocolate starts to melt, remove from heat and add other 1/2 of the white chocolate and continue stirring. Return to heat, add peppermint extract, stir until nice and smooth.
Remove tray from fridge and pour your white chocolate onto the semi-sweet chocolate. Spread the white chocolate just so it covers the semi-sweet chocolate. Immediate cover the white chocolate with the candy canes that you broke up into pieces. Gently press the candy canes into the white chocolate. Return the tray to the fridge to set/harden the white chocolate. Once it is set remove from fridge and break into pieces.
Serve and enjoy! Mangia!
