Peach & Mango Salsa
Ingredients
1 Peach
1 Mango
1/4, Purple Onion
1 Jalapeno Pepper
1 Lime, Zest & Juice
2 Scallions, white & green parts
1/2 Cup, Small Cherry Tomatoes, chopped
3 Tablespoons, Fresh Cilantro, chopped
1 Tablespoon, Olive Oil
S&P
Instructions
Peel the peach and cut into small, bite size pieces and add to a small mixing bowl. Peel the mango and cut into bite size pieces, add to the bowl with the peach. Chop the purple onion and add to the fruit. Cut the top and bottom off of the jalapeño, cut it in 1/2, remove the seeds and cut into small pieces and add it to the mixing bowl.
Cut the tomatoes and add to the bowl. Drizzle the salsa with some olive oil and season with S&P and mix well. Chop the cilantro and add to the salsa.
That’s it! Super simple and delicious spring/summer salsa. It goes great over any grilled meats or fish.

Tips
If you like a little more crunch to this recipe you can also add some more peppers:
1/4 Cup, Yellow or Orange Pepper, finely chopped
The only pepper I added to this recipe was the jalapeño and we loved the flavors. It can’t hurt to add more if you like peppers. You could also add some white onion if you like.
