Naked Chicken Parmesan
Recipe makes 6 servings
Ingredients
3, Chicken Breasts
3 Tablespoons, Olive Oil
S&P
Italian Seasonings
Garlic Powder
Mozzarella Cheese, sliced
¼ cup, Parmesan cheese, grated
1 Cup, Spaghetti sauce, recipe to follow
Instructions
Cut chicken in ½; pound out to about 1/4” thickness. Season each side of chicken with S&P, Italian seasoning and garlic powder. Heat sauce pan on stove over medium-high heat, add 1 tablespoon of oil, cook chicken (do not overcrowd your pan). Cook about 1 minute on each side and then place chicken onto a baking sheet (spray your sheet w/cooking spray).
Repeat process until all chicken is done. Top each piece with a sauce (just enough to cover top of chicken); about 1-2 teaspoons on each depending on how big your chicken is. Add a slice of mozzarella cheese; sprinkle the chicken with some parmesan cheese, about ½ teaspoon on each.
Bake at 400 degrees for about 10 minutes. Cook your pasta according to the package, drain, and place on each plate or bowl. Top with sauce, your chicken and sprinkle with parmesan cheese and parsley.

If the chicken is large enough and because you are cutting the chicken and pounding them out, this recipe can serve 6. If you need to serve more people or want leftovers, just use more chicken. Figure about 2 servings per chicken.
I love breaded chicken in this recipe but decided to change it up. I call this Naked Chicken Parmesan because I skipped the step of breading the chicken and went for a lighter version.
It is so great to make a big batch of my homemade spaghetti sauce; I keep batches of it in my freezer. This way I always have sauce I can easily thaw out whenever I need it.
