Mustard Glazed Salmon
Ingredients
2 (4 oz), fillets Salmon
1 Teaspoon, Fresh Rosemary, finely chopped
2 Garlic Cloves, minced
1 Tablespoon, dry White Wine
1 Tablespoon, Olive Oil
2 Tablespoons, Dijon Mustard
2 Tablespoons, Coarse Ground Mustard *used Grey Poupon Country Dijon (made w/Coarse Ground Mustard) in this recipe
S&P
1 Bunch of Asparagus
1 Lemon, zest & juice
Instructions
Preheat the Broiler in your oven. Spray a baking sheet with cooking spray, set aside.
Chop the rosemary finely. You can add kosher salt to the Rosemary to help cut it smaller. In a food processor or mini chopper, add the chopped rosemary, garlic, white wine, olive oil, S&P and Dijon mustard and blend together. Add about 1/2 of the coarse ground mustard and blend in processor until nice and combined. Transfer to a small bowl and add the remainder of the coarse ground mustard; mix well.
Place the salmon on the baking sheet (skin side down), season with S&P. I also added my asparagus to the same baking sheet. Add the lemon zest to the asparagus. Squeeze about 1/2 of the lemon juice over the asparagus and season with S&P.
Place baking sheet under the broiler for approx. 2 minutes. Remove from the oven and spoon the mustard sauce all over the fish. Return to the oven and finish cooking for about 5 minutes.
Serve with your favorite rice, risotto or even potatoes. Place a couple of lemon wedges to garnish the plate.
That’s it! super quick & easy meal. Not to mention, it is so delicious and healthy too.
