Mediterranean Tart w/Longfin Tuna & Roasted Veggies
Makes approx. 9-12 small slices or approx. 9 larger pieces
Ingredients
About 1 Cup, Longfin Tuna, cut into bite size pieces
1/2 Eggplant
1/2 Red Bell Pepper
1 Cubanelle Pepper
2 Roma Tomatoes
1/4 Purple Onion
1/4 White Onion
4 Large Mushrooms *I use Baby Bella’s
1-2 Tablespoon, Fresh Rosemary, finely chopped
S&P to taste
2 Tablespoons, Olive Oil
1 Puff Pastry
1 Egg
1/4 Cup, Feta Cheese Crumbles
Handful of Mediterranean Olives, sliced in 1/2
Instructions
Preheat oven to 425 Degrees.
Cut all the veggies into bite size pieces. Place all veggies onto a baking sheet. Drizzle olive oil all over the veggies and sprinkle with S&P. Sprinkle fresh rosemary all over the veggies and mix well. Place tray in oven and roast for approx. 20-25 minutes until the veggies are somewhat soft. Remove tray from oven, set aside.
Place the puff pastry onto a floured surface. Roll pastry out slightly on all sides. Place the pastry onto a baking sheet with a Silpat sheet (so that it won’t stick). If you do not have a Silpat you can use parchment paper.
Place the veggie mixture onto the puff pastry, leaving the outer edges open. Also add your Tuna on top of the veggies. Then place some of the olives around. Sprinkle with the Feta Cheese. Start to fold in all sides of the pastry and pinch together (all around the entire pastry. You’ll leave the top open.
Crack the egg into a bowl and whisk. Brush the egg all over the pastry before baking. This will help to seal all your edges and give the pastry a nice golden brown color.
Place the tray into the oven (425 Degrees again) and bake until the pastry is nice and golden brown, about 15-20 minutes. Keep an eye on it.
Remove from oven and let sit for a few minutes. Carefully transfer the tart to a board and then cut into smaller pieces.

Notes
The Longfin Tuna is similar to a tuna you buy in a can. You’ll want to cook the Longfin tuna first if you are using fresh fish. You can also substitute with canned tuna if you do not have any fresh fish on hand. I was lucky enough that my brother-in-law went fishing and gave me a beautiful piece of fish that he caught!!
For the topping on this tart, you can add any veggies that you like. I tried to stick with the more traditional Mediterranean veggies and cheese.
If you want to use fresh Longfin Tuna, just cut into large cubes. Place on a baking sheet and drizzle with olive oil and season with some S&P. Bake in oven at 325 Degrees for 20 minutes. Remove from oven and that’s it! You can cut to any size pieces you like or shred it smaller. You can use immediately or add to any tuna recipes you like.
