Lemon Bars
Makes approx. 24 bars
Ingredients
Crust Ingredients:
2 Sticks, Butter, unsalted and softened
1/2 Cup, Sugar
2 Cups, All-Purpose Flour
1 Teaspoon, Salt
Filling Ingredients:
6 Eggs
3 Cups, Sugar
3 Large Lemons (Zest & Juice (about 2 tablespoons of zest and 1 Cup of juice)
1 Cup, All-Purpose Flour
1/4 Cup, Confectioner’s Sugar
Instructions
Preheat the oven to 350 Degrees. Spray a 9×13 baking dish with cooking spray. Line the dish with foil and then spray the foil with cooking spray. Set aside.
Make the Crust: in a standing mixer, add the butter and sugar and beat until well combined. Add the flour and salt gradually and mix just until ingredients are all combined. If the dough is not completely combined, use your hands to form into a ball. Transfer the dough to the baking dish and press into the pan to create an even layer and allowing some of the dough to come up the sides. Bake the crust in the oven for about 20 minutes; it should start to get a nice light golden color. Remove from oven, set aside while making the filling.
Filling: in the standing mixer, add the eggs, sugar, lemon juice, lemon zest and the flour. Whisk the ingredients until nicely combined and smooth. Pour the mixture on top of the crust. Place back in the oven and bake for approx. 30 minutes until the filling is set. Remove from oven and set aside to cool.
I like to make my bars the day ahead. Once the pan is completely cooled, cover with plastic wrap and place in fridge overnight. Remove bars from fridge when ready to serve. Remove the bars from the pan, remove the foil and place the lemon bars onto a cutting board. Using a large knife, cut into squares. Dust with confectioner’s sugar and place onto a cake plate or platter and serve.
