Today is National KAHLUA day!! What better way to celebrate than with some of my KAHLUA Brownies that are topped with a layer of coffee ice cream and then a layer of KAHLUA Buttercream Icing and garnished with some chopped semi-sweet chocolate. This is such a decadent dessert. It truly is a treat. Check it out and give it a try.
KAHLUA Brownies
Approx. 20-24 Brownies
Ingredients
KAHLUA Brownie:
2 1/2 Cups, All-Purpose Flour
1/2 Teaspoon, Baking Powder
1 Teaspoon, Salt
1 1/2 Cups, Brown Sugar
2 Sticks, Butter, unsalted & melted
2 Cups, Semi-Sweet Chocolate Chips, melted
2 Eggs
3/4 Cup, KAHLUA Coffee Liqueur
2 Teaspoons, Coconut Oil, melted
1 Teaspoon, Pure Vanilla Extract
KAHLUA Buttercream Icing:
1 Stick, Butter, softened
2 Cups, Confectioners Sugar
1 Tablespoon, KAHLUA Coffee Liqueur
1 Teaspoon, Pure Vanilla Extract
1-2 Tablespoons, Milk, Cream or even Coffee *(I used a French Vanilla Creamer in this recipe)
Garnish:
2 Tablespoons, Semi-Sweet Chocolate, shaved or finely chopped
1 Container, Coffee Flavored Ice Cream
Instructions
Preheat oven to 350 Degrees. Spray a baking dish with cooking spray, line with foil then spray the top of the foil also. Set dish aside.
In a small bowl, combine the flour, baking powder and salt. Mix well and set aside.
Using a double boiler, melt the chocolate. You can start on the batter while the chocolate is melting. Using a spoon, stir the chocolate until it is nice and smooth.
Use the whisk attachment on a standing mixer. Add the sugar, eggs and KAHLUA and mix well. Add the melted butter and melted chocolate and whisk. Mix in the dry ingredients and whisk until all combined and smooth. Pour the batter into the prepared baking dish (I used a 9×13 casserole dish).
Bake in oven for approximately 25-30 minutes or until a knife comes out clean in the center. Remove from oven and let cool completely. Soften your ice cream; let it sit on the counter. Once brownies are completely cooled, add the ice cream to the top of the brownies and spread it evenly across the top. Place the dish into the freezer to set the ice cream. When the ice cream is set then make your icing.
Icing: in a standing mixer, add the softened butter and confectioners sugar and whisk. Add the Kahlua Liqueur and vanilla and milk (or cream or coffee)…. Add as much or as little cream as you like depending on how thick you like the icing to be. Just add a little at a time.
Once the ice cream is frozen on the brownies, remove from freezer and add icing to the top. Spread evenly all over bars and return to freezer if too soft. Once you are ready to serve, remove brownies from the pan, cut into squares and top off by sprinkling some of the shaved or chopped chocolate.
