Homemade Cheesy Biscuits

Homemade Cheesy Biscuits

Makes approx. 10 Biscuits

Ingredients

2 cups all-purpose flour

1 teaspoon sugar

1 tablespoon baking powder

8 tablespoons butter

3/4 cup milk

3 Tablespoons, Fresh Chives, chopped (plus extra to garnish plate)

1 Teaspoon, Garlic Salt

Fresh Cracked Pepper

Pinch, Kosher Salt

1 Cup, Colby Jack Cheese, shredded

3 Tablespoons, Butter

Instructions

Preheat oven to 425 Degrees.   Place a large cast iron skillet onto the stove over low heat.

In a mixer, add the flour, sugar, baking powder, salt, garlic salt and mix together.  Cut the butter into pieces then add it to the mixer.  Mix just until it starts to resembles cornmeal.

Make a well with flour mixture (push the ingredients to the side of the mixer) and slowly add milk into the middle; mixing on low until combined.

Add the chives, fresh cracked pepper and Colby Jack Cheese and give it a quick mix just to incorporate the ingredients.

Transfer the dough to a floured surface.  I like to roll it out directly on my counter.  Add a little flour to the top of the biscuit mixture.  Using a floured rolling pin, roll out the dough to about 1/2″ thickness.  If you like the biscuits to be thicker, roll them out to about 3/4″ thickness.  Cut with small biscuit cutter or even a lid to a mason jar.  I used a lid to one of my mason jars.  I sprayed it first with some cooking spray so it wouldn’t stick to the dough.

Add about 2 tablespoons of butter to the bottom of the warm skillet.  Once the butter is melted, add the biscuits into the pan.  Make sure they are not touching in the pan to avoid sticking together.  I can fit about 7 biscuits in my large skillet.

Bake for approx. 10-12 minutes or until golden brown.

Remove the biscuits from the oven, melt the remaining tablespoon of butter.  Using a pastry brush, brush the melted butter on top of each biscuit.

Place the biscuits in a basket lined with a napkin and serve with butter or your favorite jams.  You can also slice them open; they make great Bacon, Egg & Cheese Biscuit sandwiches.  We also like to use them for Eggs Benedict.  They also go great with a bowl of your favorite soup or Chili.  If you have leftover chives you can use them to garnish your plate.
