You can tell Spring is just around the corner. We are getting days sprinkled in each week that are sunnier and warmer. Each day it is staying light out just a little bit longer. So, what’s a girl to do with this nice weather? Well, besides soaking up some of those sun rays and watching your kids play outside more, I love to use my grill. That’s right, I love to grill outside! I love the way our food tastes after cooking it on the grill. I also love that I have less of a mess in my kitchen. There is just something so great about cooking in the outdoors that I love. I usually get a shout out from my neighbor saying it smells good or asking what I am making! I like to use my grill in the summertime for the majority of our dinners; I have learned to cook many different types of food on our grill. These nicer days have me thinking of all kinds of recipes to make so I had to start making a list of them. Stay tuned for more grilled recipes in the coming months. I may have to change my name from “Dee’s in the Kitchen” to “Dee’s out Grilling”.
We do however still get cold weather mixed in with these nicer days so when we see temps close to 60 I have to take full advantage. No sense in letting those days slip by. These past few days we have gotten some warmer temps so I decided to grill chicken last night. I went with a Tequila-Lime marinade and we made Tacos. My kids just love it when we make Tacos and especially on Tuesday nights. They love to come home from school and say, “Mom, what’s for dinner? You know it’s Taco Tuesday, right”?!! Makes me laugh and I love that my kids are getting into the cooking and meal planning with me.

Grilled Tequila-Lime Chicken Tacos
Makes approx. 6 Servings
Ingredients
6, Chicken Breasts, boneless & skinless
Marinade:
1/4 Cup, Olive Oil
1 Teaspoon, Chili Powder
1 Teaspoon, Garlic Powder
1 Teaspoon, Onion Powder
1 Teaspoon, Cumin
1/2 Teaspoon, Paprika
1 Lime, Zest & Juice
1 Teaspoon, Honey
2 oz., Tequila
3 Garlic Cloves, peeled & rough chopped
S&P
4+ Tablespoons, Fresh Cilantro, rough chopped
10 Tortilla Wraps, Corn or Flour *used white corn tortilla wraps in this recipe
Instructions
Marinating Chicken: Place chicken into a plastic bag or a casserole dish. Mix together the oil, honey, all the spices and pour over chicken. Chop and sprinkle cilantro all over the chicken (reserve some Cilantro for garnish). Cover the chicken and place in fridge to marinate it. Marinate for at least an hour.
Cooking the Chicken: Turn grill to high heat. Remove chicken from marinade and place on grill. Cook approx. 5+ minutes per side or until chicken reaches an internal temp of 160 degrees. Cooking time will vary depending on how big/thick your chicken breasts are. The chicken will continue to cook after removing it from the grill.
I also grilled the lime that I squeezed into the marinade. I placed it directly on the grill and then placed them onto the platter with the chicken to serve! You could also serve with some fresh lime wedges. Remove chicken from grill and let it rest for about 5 minutes. You can place a piece of aluminum foil loosely over top to keep the chicken hot. Slice and place onto a platter. Garnish with the grilled limes and sprinkle the remaining Cilantro on top.
Heating the Tortilla Wraps: When the chicken is just about done or when the meat is off the grill & resting you’ll want to heat the tortilla wraps. Place tortilla wraps directly onto the grill and heat through for only about 30 seconds or so per side (just until you start to see some grill marks). Keep a close eye on them so they don’t burn. Transfer the tortilla wraps immediately to a tortilla warmer/dish with a lid or cover with some aluminum foil to keep them warm and pliable.
While chicken is cooking you can prepare all your side dishes. You can also prep your side dishes ahead of time and place them in the fridge until you are ready to serve dinner.

- Guacamole
- Black Beans
- I love to heat our black beans with 1/2 lime (juice), chopped purple onion and cilantro
- Rice
- Shredded Cheese
- Shredded Lettuce
- Salsa
It is fun to serve this family style and let everyone build their own tacos. That way they can put whatever toppings they like on their tacos.
