Grilled Pear & Brie Crostini

Grilled Pear & Brie Crostini

Ingredients

2 Pears, any kind you like

5 oz, Brie Cheese, soft & spreadable type

2 Tablespoons, Fresh Rosemary, finely chopped

1 Tablespoon, Honey

1 French Baguette

Olive Oil, to drizzle

Instructions

Heat oven to 350 Degrees.  Also heat your grill on high heat.

Slice the bread to about 1/4″- 1/2″ thickness (or however thick you like the crostini) and line a baking sheet with them.  Drizzle with olive oil and season with some salt (kosher salt) & grind some fresh black pepper onto the bread.  Place in oven on center rack and bake until bread becomes nice and crisp, about 5-10 minutes.  Watch it carefully to avoid overcooking.

Remove the bread from oven and let cool.

Peel the pears and slice them into big pieces.  Place on a plate and drizzle with some honey and sprinkle with about 1 tablespoon of the rosemary.  Place  pears onto the grill and cook for a minute or 2.  Flip the pears over and continue grilling.  You may need to flip them a few times to ensure even grilling.  Grill just until pears get nice grill marks and start to get slightly softened.  Remove from grill, place on your plate again and set aside to cool.  Once cooled, slice/cut into smaller pieces.

To assemble the crostini:  With a knife, spread the Brie cheese on top of the bread.  Add some of your pear on top of the cheese.   Place the crostinis onto a platter then drizzle with honey and sprinkle the remaining rosemary on top for garnish.

Serve as an appetizer at your next gathering/party.

I have made this appetizer many times and I usually will grill the pears the day ahead.
I will also make my crostini bread/toasts the day ahead also.  Be sure to let them completely cool before storing them and best to store them in brown paper bag (learned that trick from my sister)! I have made the mistake of putting my crostini in a plastic bag over night and they were too chewy!!
