Grilled Panini

Grilled Panini Sandwich

Ingredients

2 Thick Slices, your favorite bread

2 Slices, Colby Jack Cheese

2-3 Slices, Bacon, cooked

3 Slices, Grilled purple Onion

2 Slices, Tomato

Butter, to spread on bread

 

Instructions

Heat a griddle on the stove over medium-low heat.  Butter the slices of bread and top the side without butter with your cheese, bacon, grilled onion and tomato slices.

Cook sandwich on griddle for approx 3-5 minutes per side or just until the bread is nice and golden brown and cheese starts to melt.  I used a spatula to press the sandwich together while cooking.

So simply, yet so tasty.  Is it lunchtime yet?!

Tips

Grilled Cheese with Colby Jack, Grilled Onion, Bacon I used to have a panini maker which is great for making these types of sandwiches. However, a grill pan or saute pan will work just as well.  You can place another saute pan on top of the sandwich while cooking or press down with a spatula.

For the bread, I used a gluten free bread I had on hand.   You can use any type of bread you like or have but a nice thicker bread works best w/this sandwich.

For the cheese, you can use any cheese you like or have on hand.  The Colby Jack was great in this sandwich.

For the onion, I had grilled purple onion leftover from dinner the night before.  I had drizzled my onions with some olive oil, S&P and then grilled it (turning the onion several times to evenly cook it).  You can store any leftovers in your fridge.   It was so good in this sandwich.  Check out what leftovers you have in your fridge; they make a great addition to your next recipe/sandwich! I love when I can get more than one use out of my ingredients.  Perfect for busy days/nights.

Some fresh herbs would be a great addition to this sandwich such as basil.
