Grilled Chicken, Roasted Asparagus & Caramelized Onion Pizza
Makes 8 Slices
Ingredients
1, Chicken Breast, boneless & skinless
1 Teaspoon, Italian Seasonings
½ Teaspoon, Garlic Powder
½ Teaspoon, Onion Powder
S&P
Olive oil
Asparagus, small handful (about ½ a bunch)
1, White Onion, sliced
1 Tablespoon, Butter
1 ½ Cups, Mozzarella Cheese, shredded
¼ Cup, Parmigiano-Reggiano Cheese, grated
Pizza Dough
Instructions
Heat oven to 400 degrees.
Season Chicken with Italian seasonings, garlic powder, onion powder, S&P and drizzle olive oil over it. Let sit for approx. 30 minutes then grill about 6 minutes on each side. Pull off grill, set aside. Once cooled, thinly slice the chicken.
Spray a baking sheet. Place asparagus on baking sheet; drizzle with olive oil and season with S&P. Roast for about 10 minutes in the oven. Remove from oven, set aside. Once cooled, cut asparagus into long pieces (you should get about 3 cuts/3 pieces out of each asparagus).
On stove, over medium-high heat, saute onion in 1 tablespoon oil and butter. Season with S&P and cook until nicely caramelized. To caramelize onions, this process can take up to an hour. You can turn heat down to medium-low after about the first 15 minutes to avoid burning the onion. If the onion starts to stick to pan you can add a small amount of water to release it from pan. Once done, remove from heat and set aside.
On a floured surface, roll out pizza dough to desired size/shape. Bake in oven for approx 8-10 minutes and remove from heat.
Turn dough over and brush edges of dough with olive oil. Add pizza sauce, leaving about 1 inch of crust around open. Add chicken, onion and asparagus to pizza. Top with cheeses and bake just until cheese starts to melt, approx. 10 minutes.
Remove, slice and serve.

Pizza Dough: you can use stored bought or make homemade.
