Gingerbread Muffins
Makes 6 Large Muffins or 12 Small Muffins
Ingredients
2 1/2 Cups, All-Purpose Flour
1 Tablespoon, Ground Ginger
1 Teaspoon, Cinnamon
1/2 Teaspoon, Ground Cloves
1 Teaspoon, Baking Powder
1/2 Teaspoon, Salt
1/2 Stick, Butter, unsalted & softened
1/4 Cup, Coconut Oil, melted
1/4 Cup, Real Maple Syrup
1/4 Cup, Dark Brown Sugar, packed
1/4 Cup, Applesauce
1/2 Cup, Molasses
1 Egg
3/4 Cup, Whole Milk
Sparkling Sugar, to sprinkle on top of each muffin
Instructions
Preheat oven to 350F.
In a medium bowl, combine the flour, ginger, cinnamon, ground cloves, baking powder and salt. Mix to combine ingredients and set bowl aside.
In a standing mixer, add the butter, coconut oil, maple syrup, dark brown sugar, applesauce, molasses and egg. Using the whisk attachment, mix ingredients on low speed just until combined. Add the flour mixture and milk (alternating between the two until all of it is added; start and end with the flour mixture). Scrape the sides of the bowl and mix once more. The mixture should be somewhat thick.
Spray a muffin tin with cooking spray. Add the muffin mixture to each muffin cup. Sprinkle the top of each muffin with the sparkling sugar.
Bake in the oven for approx. 25-30 minutes, until a knife or toothpick comes out clean from the center of the muffin. Remove the muffins from the oven and place onto a rack to allow them to cool.
