Fig & Prosciutto Pizza w/Gorgonzola Cheese
Makes a 12" Pizza Pie, about 8 slices
Ingredients
6-8, Glazed & Roasted Figs
4-6 slices, Prosciutto
1/4 lb., Gorgonzola Cheese
Handful of Arugula
Pizza Dough, store bought or homemade
Instructions
Preheat Oven to 400 Degree.
If making homemade pizza dough, make the dough first and cook one side of it until nice and golden on the bottom.

While the dough is cooking, cut the figs in half, set aside. Remove dough from oven, turn over so that you top the bottom of the dough. That way your pizza dough cooks evenly when you return it to the oven. Brush some olive oil around the outer edge of your crust. Then, top the pizza dough with some of the fig sauce (from the fig container), spread evenly on the pizza crust leaving about an 1″ around so that you do not cover the edges of your crust.
Place the figs around the dough. Take the prosciutto and by hand tear into pieces/strips and place around the pizza. Cut pieces of the Gorgonzola Cheese and just place onto pizza. If you have leftover fig sauce drizzle a little bit over the top of the pizza.
Place pizza into oven and bake just until cheese melts, about 5 minutes.
Remove pizza from oven, top with your Arugula (you can chop of the Arugula first if you like it to be smaller). Cut the pizza and serve.

Tips
Figs are a summer time fruit so it can be more difficult to find them in the produce aisle this time of year. However, my local supermarket carries Glazed & Roasted Figs which worked so well on this pizza. If you cannot find them just ask your local supermarket. I found them in the section near their olive bar and gourmet cheeses. If you do find fresh Figs you may want to also buy a jar of Fig Spread/Jam to spread onto the pizza dough as your sauce.
For the Prosciutto, it can somewhat expensive if you buy it prepackaged. So, I like to buy it at the deli counter and just order a certain # of slices that I need. My local supermarket also sells packages of Prosciutto (especially this time of year around the Holidays) and they have different size packages. So I can usually find this very easily and just the right amount.
This pizza is amazing. The figs are sweet, the Prosciutto is salty and the Gorgonzola cheese and Arugula adds just the right amount of punch to it. It is so good!!
