What is your favorite type of eggs? There are many to choose from, like scrambled, omelet, sunny side up, over easy just to name a few. I love eggs! What better way to start off your day than with a nice fresh and hot breakfast to go with my cup of coffee. Eggs are so quick and easy to make, they are good for you and there are so many ways you can cook them or add flavor to them. This has been a go to recipe for me lately, especially with our busy mornings. Usually we have some leftover bread from one of our dinners and this is a great way to use up our leftovers.

Eggs Over Easy on Rosemary Toast
Ingredients
2 Eggs
2 Slices, leftover bread (from dinner the night before)
2 slices, Ham
1 slice, American cheese
1 teaspoon, Olive oil
1 teaspoon, butter
2 Tablespoons, Ricotta Cheese
S&P
Instructions
In a frying pan, heat the oil and butter on medium-low heat. Crack the eggs and carefully add them to the pan without breaking the yolk. Season the egg white with S&P. Turn heat down to low. Add ham to your pan to just heat through. You can put a lid on the pot; leave a slight opening to let steam release. While that is cooking take 2 slices of your bread; slice them just enough to fit into your toaster and toast. I love to use leftover bread from dinner the night before. You can use Italian bread or any bread you like. The Italian in my loves the rosemary and garlic bread from the bakery aisle at my local supermarket.
Cook egg just until it starts to turn white in color, about 3 minutes or so. Very carefully flip your eggs over add ½ piece of cheese to each egg and turn off the heat.
Add the ricotta cheese to each slice of toast then place a slice of the ham on top. Add an egg on top of the ham and serve.

Suggestions
You can also add some of your favorite herbs to garnish or a slice of avocado.
I like to use a nice baked, sliced Honey Ham in my recipe.
Ricotta Cheese: I always use a part skim Ricotta. It gives this recipe a nice mild creaminess, adds some extra protein and compliments the egg & ham well.
Seasoning the eggs w/salt: season the egg white only to avoid pulling moisture out of the yolk. Salt can cause the yolk to become dry during cooking. If you like a runny yolk, that’s the way to go!
