Dee’s Homemade Spaghetti Sauce
Ingredients
1 Tablespoon, Olive Oil
1, Large Onion, diced
1, carrot, finely chopped
1 Teaspoon, garlic, minced
S&P
1 Tablespoon, garlic powder
1 bunch, Italian parsley *flat or curly
1 Tablespoon, Oregano
1 Parmesan cheese rind
2 (14.5 oz) cans, fire roasted tomatoes
2 cans, crushed tomato
2 cans, tomato sauce
1 can, tomato paste
1 cup, red wine *use good wine-what you like to drink
1 cup, Parmigiano Reggiano Cheese, grated
Instructions
In a large pot over medium-high heat, add oil, chopped onion and carrot and cook until onions are translucent, about 5 minutes or so. Add all cans, red wine and parmesan cheese rind and stir well. Chop herbs, add to sauce and stir well. Simmer sauce on low for a few hours stirring occasionally. The longer is sits, the better the flavor. I have been known to simmer my sauce all day!!

Notes
Serve with your favorite pasta and garnish with fresh parsley, grated Parmesan cheese or my favorite, Parmigiano Reggiano cheese.
If you don’t have fresh herbs on hand you can substitute with dry herbs
For the wine, make sure you add a good wine, something you would drink. I like to add Pinot Noir or even a Cabernet. The alcohol will cook off in the sauce. You can even add a splash of balsamic vinegar.
If you do not like fire roasted tomatoes or can’t find them, you can substitute diced tomatoes.
You can also cook this in your Crockpot if you don’t want to cook it on the stove.
