Crockpot Chili
Ingredients
1 Tablespoon, Olive Oil
1 Teaspoon, Garlic, minced
6, mushrooms, cleaned & chopped
1, Onion, chopped
1, Jalapeno pepper, seeded & chopped
1, Cubanelle pepper, seeded & chopped
1, Red pepper, seeded & chopped
2 (14.5 oz) Cans, Fire roasted tomatoes
1 (12 oz) bottle, beer *your favorite kind
1 (32 oz) container/can, low sodium beef broth
1 (15.5oz) can, Red Kidney Beans
1 (10.75 oz) can, condensed tomato soup
1 cup, fresh corn on cob, thawed *optional
1 (12 oz) can, tomato paste
Few dashes, Worcestershire Sauce
2-3 lbs. Ground Beef (85% Lean, 15% Fat)
1 lb., Beef Stew Meat, cubed into bite size pieces
3 Tablespoons, Flour
1 cup, Cilantro, chopped (plus some for garnish)
Chili Spices- to make combine 1 teaspoon of each of the following spices: smoked paprika, garlic powder, onion powder, chili powder, whole oregano, Italian seasoning and ground cumin
Instructions
Turn Crockpot on High heat. Add oil, onion and peppers. Sauté mushrooms on stove over medium heat with 1 teaspoon of olive, cook for about 5 minutes. Add garlic and season with S&P and cook for 1 minute longer then add to Crockpot. Add tomatoes, beer, broth, beans, Worcestershire, tomato soup and paste to Crockpot and stir well. Sauté chopped meat on stove over high heat. Start breaking up the meat and cook for about 3 minutes. Add all your spices to the meat and cook another 1-2 minutes. Add meat to Crockpot and stir well. Lightly coat Beef Stew meat with flour; cook on stove over medium-high heat just until it starts to brown, then add to crockpot. Add chopped cilantro to crockpot and stir. If adding the corn to this recipe, add it towards the end. It doesn’t take very long to cook; you can add it about 10-15 minutes before serving.
Cook on High for 4-5 hours or Low for 8-10 hours

- Sour Cream
- Purple Onion, finely chopped
- Tortilla strips
- Avocado, diced
- Cilantro, chopped
Serve with corn bread or a nice thick bread for dunking.
