Breakfast

Coffee Cake Muffins

Coffee Cake Muffins

Makes approx. 6 Muffins

Ingredients

Muffin Batter:

1 1/2 Cups, All-Purpose Flour

1/2 Cup, Brown Sugar

2 Teaspoons, Baking Powder

1/4 Teaspoon, Baking Soda

1 Teaspoon, Cinnamon

1/4 Teaspoon, Ground Nutmeg

1 Teaspoon, Pure Vanilla Extract

1 Teaspoon, Maple Extract *optional

1/2 Teaspoon, Salt

3/4 Cup, Whole Milk

1/3 Cup, Coconut Oil, melted

2 Large Eggs

Crumb Topping: 

1/3 Cup, Sugar

1/3 Cup, Brown Sugar

1 Teaspoon, Cinnamon

1/4 Teaspoon, Ground Nutmeg

1/2 Teaspoon, Salt

1 Stick, Butter, unsalted & melted

1 1/2 Cups, All-Purpose Flour

Glaze:

1/4 Cup, Confectioners’ Sugar

1 Teaspoon, Milk or Cream

1/2 Teaspoon, Pure Vanilla Extract

Instructions

Preheat oven to 375F.  Line a baking sheet with a Silpat sheet or with parchment paper, set aside.

Make Crumb Topping:  In a bowl, combine the sugar, brown sugar, cinnamon, nutmeg, salt and mix together.  Pour the butter in and whisk just until all combined.  Add the flour and use a spoon or scraper to mix it all together.  Transfer the mixture to the baking sheet that has the Silpat or parchment paper.  Spread the mixture out and let it sit until you are ready to top the muffins.

In a mixer, add the flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt.  Turn mixer to low to combine the ingredients.

In a separate bowl, whisk the eggs and milk.  Pour the mixture into the mixer with the flour mixture.  Also add the coconut oil and mix on low until all ingredients are combined.

Spray a muffin tin with cooking spray, transfer the batter to the muffin tins.  Add the crumb topping to each muffin and gently press the topping down onto the batter so that it sticks while cooking.

Bake in the oven for approx. 15-20 minutes, until a knife comes out clean when inserted into the center of the muffin.

Remove the muffins from the oven, transfer them to a rack to cool.  Once they are cooled, make the glaze.  To make the glaze, add the Confectioners sugar, milk and vanilla to a mixer and whisk until smooth.  Spoon over the muffins or drizzle over top.  Serve or store to eat throughout the week.
