Beef & Broccoli Bowl
Makes approx. 5 Servings
Ingredients
Marinade:
1/2 Cup, Tamari
1/4 Cup, Cornstarch
1/4 Cup, Beef Broth
3 Tablespoons, Sherry Wine
1 Teaspoon, Sesame Oil
1/3 Cup, Oyster Sauce
2 Tablespoons, Brown Sugar
1 Tablespoon, Fresh Ginger, grated
2 Cloves, Fresh Garlic, minced
Steak:
2 Tablespoons, Avocado or Olive Oil
4-5 Steaks, Beef *We used Filet Mignon in this recipe (figure approx. 4-6oz. per person)
Veggies:
1 Tablespoon, Olive or Avocado Oil
1 White Onion, sliced
2 Bell Peppers, seeded & sliced (can use red, yellow and/or orange peppers)
1 Teaspoon, Tamari (or Soy Sauce)
S&P
Rice:
Rice *use your favorite rice *We used a Texmati White Rice
2 Cloves, Fresh Garlic, minced
1 Tablespoon, Fresh Ginger, grated
1 Tablespoon, Olive Oil
S&P
Handful, Fresh Parsley, chopped
Instructions
Slice steak thinly, across the grain. Place it into a baking dish or plastic bag.
In a bowl, whisk together the Tamari (or Soy Sauce), cornstarch, sherry wine, sesame oil, oyster sauce, brown sugar, ginger, garlic and S&P. Pour 1/2 of the marinade over the steak, cover with plastic wrap or seal the plastic bag and place in fridge for about 30 minutes.
Cook rice according to the package. I add ginger, garlic, olive oil, S&P to the rice while it is cooking. Once the rice is done, adjust seasoning as needed. Add chopped parsley and stir.
Heat a large skillet or Wok on the stove, over medium-high heat. Once the pan is hot, add the oil. Once the oil is hot, add the onions and peppers. Cook for approx. 10 minutes, season with S&P and Tamari. Add the broccoli and stir well. Season with a little more S&P and cook until broccoli starts to become tender. Remove the veggies from the pan and set aside. Return pan to stove over medium-high heat. Add a drizzle of olive oil then add the steak. Stirring occasionally, cook just until beef is cooked through. Remove the steak from the stove, set aside.
Pour the remaining marinade into the pan, whisking until it starts to get thicker. Add the steak back to the pan and stir to coat it in the marinade.
Place rice into a bowl (to one side), then add some steak, veggies, garnish with parsley and serve with some chopsticks.
Notes
Steak: We used Filet Mignon in this recipe because it happens to be our favorite cut of beef. Filet is quite extravagant for this recipe and a bit more costly. It was also what we happened to have on hand when we made this. Instead of the filet, you can use (and typically will see) flank or sirloin steak in this type of recipe. Slice it thinly across the grain and follow the rest of the recipe as listed above. If you decide to splurge a little, then go for it with the filet! It is so tender and delicious.
