Banana Chocolate Chip Muffins
Makes approx. 48 Mini Muffins
Ingredients
2 Cups, All-Purpose Flour
1 Tablespoons, Baking Powder
1/2 Teaspoon, Baking Soda
1/2 Teaspoon, Salt
1/2 Teaspoon, Cinnamon
1/4 Teaspoon, Ground Nutmeg
1 Stick, Butter, softened
1 Cup, Sugar
1 Teaspoon, Pure Vanilla Extract
2 Eggs
3 Bananas, mashed
1 Cup, Buttermilk
1 Cup, Mini Semi-Sweet Chocolate Chips
Streusel Topping:
1/2 Cup, Quick Oats
1/2 Cup, Brown Sugar
1 Teaspoon, Cinnamon
1/2 Cup, All-Purpose Flour
4 Tablespoons, Butter
Instructions
Preheat oven to 375 degrees.
Streusel Topping: In a food processor, add the quick oats, brown sugar, cinnamon and flour. Cube the butter, add to the processor and pulse until you have a crumbly mixture. Set aside.
Flour Mixture: In a small bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir well and set aside.
In a standing mixer, add the butter with the sugar and mix until fluffy. Add the vanilla and mix again. Add the eggs, 1 at a time, mixing well after each one. Mash the bananas (I like to run my bananas through a mini chopper/processor so they get nice and smooth/creamy). Add the bananas to the batter and mix well.
Start adding the dry ingredients to the mixer (flour mixture) and the buttermilk. Alternate between the flour and buttermilk (starting and ending with the flour) until you have added all of it. Mix well. Add the mini chocolate chips and mix just to incorporate into the batter.
Spray mini muffin tins and fill each cup about 3/4 of the way with the muffin batter. Place about a teaspoon of the Streusel topping onto each muffin. Bake in the oven for approximately 10-12 minutes, until a toothpick comes out clean. Remove from the oven and set aside on a cooling rack.

Notes
These muffins would also be great with some toasted nuts added to them. You could also add fiber and/or protein powder to add some healthy benefits! You could also substitute applesauce for the butter or even add some apple butter.
