Baked Onion Rings w/Dipping Sauce

Ingredients
1 Large Yellow Onion
1 Cup, All-Purpose Flour
1 Teaspoon, Paprika
1 Teaspoon, Garlic Powder
S&P
1 Cup, Buttermilk
2 Eggs
1 Cup, Seasoned Italian Breadcrumbs
1 Cup, Panko Breadcrumbs
Olive Oil
Dipping Sauce:
1/2 Cup, Mayo
1 1/2 Tablespoons, Ketchup
2 Tablespoons, Creamy Horseradish
1/2 Teaspoon, Onion Powder
1/4 Teaspoon, Paprika
Pinch of S&P
1/8 Teaspoon, Dried Oregano
Instructions
Heat oven to 450 Degrees. Line a baking sheet with a Silpat sheet or parchment paper. Set aside.
Make the dipping sauce: This can be made ahead of time or while the onion rings are baking. Combine the mayo, ketchup, horseradish, paprika, cayenne, S&P, oregano and onion powder until blended together. If making in advance, cover and refrigerate until ready to serve.
Make the Onion Rings: Trim ends off the onion, peel the outer layer off then slice into thick slices. Gently pull apart the layers of the onion. You should have rings. Be gently when pulling the onion apart to avoid breaking them.
Setup an Onion Ring Station:
- 1st Bowl: Flour, Paprika and garlic powder and S&P (mix together).
- 2nd Bowl: whisk the eggs and buttermilk together and add a pinch of S&P.
- 3rd Bowl: Combine the Italian breadcrumbs, Panko and good pinch of S&P.
Start by dredging the onion rings into the flour mixture. Then dip and coat them into the egg mixture and finally into the breadcrumb mixture. Place each onion ring onto the baking sheet. Leave a little space in between each onion ring.
Spray the tray of onion rings with some cooking spray. Bake the onion rings in the oven for 10 minutes. Gently turn the onion rings over, spray again with cooking spray and then bake for another 10 minutes or until nice and golden brown and crispy. Remove from oven and place on a platter with your dipping sauce.
