Bacon Chicken Ranch Pizza
Makes a 12" Pie; 8 slices
Ingredients
3-4 slices, Bacon, cooked & chopped
1, chicken breast, seasoned/grilled & sliced thin
1 Tablespoon, Olive Oil
S& P
1 Teaspoon, Italian Seasoning
1 Teaspoon, Garlic powder
Ranch Dressing *can use store bought or make my homemade Ranch (see my recipe section)
1 Cup, Mozzarella Cheese
Pizza Dough, if frozen thaw out *(Can you store bought or make homemade dough)
Corn Meal, for rolling out dough
Instructions
Cook and chop the bacon; put in small bowl and set aside. Season the chicken with olive oil, s&p and Italian seasoning then grill about 5 minutes on each side. Once chicken is off grill and cooled slice thin and set aside in bowl. Shred the Mozzarella cheese, put in small bowl and set aside. Make the Ranch dressing, recipe to follow. Now all your toppings are ready to top your pizza.
Roll out pizza dough. Depending on how big you want pizzas, you can cut the dough in half or in quarters for individual pizzas. Sprinkle some corn meal onto counter or board and roll out dough to about 1” thickness. If your rolling pins starts to stick use a little flour on it. Bake in oven at 400 degrees just until bottom of crust is lightly browned/crisp, about 5 minutes. Cooking time will vary depending on how thick your crust is. Take dough out of the oven & flip over. Top the crust with the Ranch dressing and spread evenly over crust, leaving about an inch of crust around.
Sprinkle bacon over top and place chicken slices onto crust. You can sprinkle with some Italian seasoning and garlic powder for some extra seasoning. Then layer on the mozzarella cheese.
Bake in the oven or on the grill until cheese is melted, about another 5 minutes.
Slice and serve! Mangia!
Tips
Ranch Dressing: you can make this dressing ahead and store in your fridge.
Chicken: you can make this ahead also, even the day before. Just slice before topping pizzas
Pizza Dough: We typically roll the dough out & cook 1 side right before topping them. If you are pressed for time or everyone doesn’t want to roll out their own dough, you can made ahead (same day) so they are ready for topping.
