Molten Lava Cake
Makes approx. 6 individual cakes
Ingredients
6 oz., Bittersweet Chocolate
1/2 Cup, Semi-Sweet Chocolate *I used Nestle Toll House choc. chips
1 1/4 Sticks, Butter, unsalted
1/2 Cup, All-Purpose Flour
1 1/2 Cups, Confectioners Sugar (powered sugar), plus a little extra to sprinkle on finished cake
3 Eggs
3 Egg Yolks
1 Teaspoon, Pure Vanilla Extract
1/4 Teaspoon, Almond Extract *optional
Ice Cream, any flavor you like
Instructions
Preheat oven to 425 Degrees. Spray individual ramekins with cooking spray, set aside.
Melt the bittersweet chocolate, semi-sweet chocolate and butter in the microwave. I cooked in microwave for about 1 minute at a time. After each minute I removed the bowl and stirred the chocolate. I kept doing this until all the chocolate was melted.
In a standing mixer, add the flour, confectioners sugar. Then add the chocolate to the mixer and combine. Add the eggs and egg yolks and mix well. You want the mixture to be nice and smooth. Add the vanilla and almond extract and mix again.
Transfer the cake batter to the ramekins, filling them equally. Bake for approx. 13 minutes, until the outer edge of the cake is firm. Remove from oven, loosen the cakes by running a knife around the outer edge of each ramekin. Place a plate or bowl on top of the ramekin and turn over so that the cake comes out of the ramekin and onto your plate/bowl.
Top with anything you like. I added Party Cake ice cream (which tasted like birthday cake) and sprinkled some confectioners sugar on top.
