Garlic & Rosemary Fries
Ingredients
2-3, Large Baking Potatoes
1 Tablespoon, Olive Oil
2 Tablespoons, Fresh Rosemary, finely chopped
1 Teaspoon, Garlic Powder
S&P, good dash of each
Instructions
Preheat oven to 425 degrees. Leaving skins on the potatoes, cut potatoes into thin strips. Place the potatoes into a bowl of very cold water and soak for 30 minutes-hour. Remove potatoes and dry well with towel or paper towels.
Transfer potatoes to a mixing bowl, add oil, rosemary, S&P and toss to coat all potatoes. Put potatoes onto a baking sheet (spray sheet w/cooking spray). Place in oven on middle rack and cook for approx. 20-25 minutes or until nice and golden brown.

Notes
Soaking the potatoes will help pull some of the starch out of the potato. My fries turn out nice and crisp on the outside when soaking them first.
You can put the tray of fries under the broiler at the end to crisp them up if needed.
Cooking time may vary depending on how thick you cut your fries.
