Emma’s Oatmeal Raisin & Chocolate Cookies
1 1/2 Cups, All-Purpose Flour
1 Teaspoon, Baking Soda
1 Teaspoon, Salt
1 Teaspoon, Cinnamon
2 Sticks, Butter, unsalted & softened
1 Cup, Brown Sugar
1/2 Cup, Sugar
1 Teaspoon, Pure Vanilla Extract
3 Cups, Quick Oats
6 oz, Baking Raisins
1/4 Cup, Nuts (we used Macadamia nuts), chopped
2 Cups, Mini Chocolate Chips
1 Cup, White Chocolate Chips
Heat oven to 350 degrees.
In a small bowl, combine flour, baking soda, salt and cinnamon; set aside.
In a standing mixer, combine butter, brown sugar and sugar and mix until creamy.
Add eggs, 1 at a time and mix well. Add vanilla.
Slowly add your flour mixture and mix until all combined.
Add oats, raisins, nuts, chocolate chips and mix just until all combined.
Place a teaspoon of dough onto baking sheet. I used my Silpat sheet on my baking sheet so the cookies wouldn’t stick.
Bake for approx 10-12 minutes. Remove from oven and let cool on a cooling rack.
