½ bag (about 5 cups), Coleslaw mix
1 Tablespoon, Honey
1 teaspoon, Apple cider vinegar
1/3 cup, Mayo
1 Tablespoon, Dijon mustard
Pinch, Salt & Pepper
2 Scallions, chopped or sliced on an angle
1 dash, Sriracha or hot sauce (if you like it spicy)
Mix all ingredients in a bowl and toss until all the cabbage is coated. If you like your coleslaw a little sweeter you can sprinkle a little sugar on it. It tastes great without the sugar too.
Coleslaw Mix: I buy one that has shredded red cabbage, green cabbage and carrots for a nice mix of color.
I use ½ bag if I am serving our family of 4. If you need to serve a bigger crowd you can easily double the recipe.
This coleslaw is great as a side dish to spare ribs or add on top of your pulled pork sandwiches.
